Remember, the digestive process starts well and truly in the mouth and we must hold the food in the mouth for some time so that our salivary juices have time to start breaking the food down.
I have also noticed that chewing food thoroughly also prevents us from overeating, since the stomach has ample time to send its signal to the mind about being full — much before we have overeaten. This in turn prevents us from being overweight.
