Harissa is a North African hot paste or sauce that is made from dried chilli peppers,garlic,cumin and olive oil. It is either used as a condiment or as an ingredient in a dish and its components vary regionally. Harissa is also used in a few recipes of other cuisines,namely Moroccan,Algerian and Libyan,though it is often treated as a condiment to be served on the side. In Morocco,couscous is generally served with harissa sauce.

Harissa paste is also sold in tubes,jars and cans,and in the West is eaten with pasta,in sandwiches and on pizza. You can try a chicken with harissa paste or oil at Moshe’s or Woodside Inn,Mumbai.
